What is Dashi? How to make dashi

You might be wondering What Dashi is, and you also might wonder how fresh bonito fish looks like?

Dashi is made from Bonito fish flake & Konbu dried sea weed
Bonito Fish - we call it Katsuo,
It is season in Spring in Japan.

We have Bonito raw in Japan as Tataki eaten with ponzu sauce

Bonito is called Katsuo in Japan.
Bonito fish is dried, and it becomes famously Katsuo bushi = Bonito flakes

This bonito flakes make dashi with Konbu

Dried Konbu
Which is used to make dashi


1 piece of  konbu ( 10cm) for over nite in 1 litre of wate, and heat it to just before the boiling point, and remove
konbu, and turn off the heat, and add 20grm of Bonito flakes, andwait until all the bonito flakes sink at the bottom, and use seeve 7 mosli cloth to squeeze the dashi.

The colour of dashi is Golden.

This dashi could be used for Miso soup, and noodle soup, and chawan mushi etc.

How to Cook Soba noodle soup with Yellowtail

Have you ever tasted Yellowtail Sashimi?
Yellowtail has distinctive flavour that I can't find with any other fish.

I love Yellowtail sashimi really thinly sliced, I can't have it too thick, and this fish has to be super fresh to eat.

The other day I cooked Soba with yellowtail.
I bought Yellowtail sashimi, and I didn't consume so that I kept it in the freezer too long that
I decided to cook yelowtail with Soba.



Ingredient

200 ml Dashi How to Cook Dashi
Soba ( need to boil for 5-10 min)
1 & half to 2 tablespoon Dark Japanese Soy sauce
1-2 teaspoon Mirin
50grm Yellowtail
2 spring onion chopped thinly
5 grm leek
1 clove of garlic (slice thin)
20 grm Beansprouts
Veg oil

Heat oil to cook spring onion, garlic, & leek, when you smell spring onion & leek cooked add bit of salt and black pepper, and add Yellowtail and cook, and add beansprouts and stir all together about 20 seconds, and add Dashi stock + Soy + Mirin, and taste if you need more soy, and add Soba.
You could garnish Fresh chopped Spring Onion and sprinkle sansyo pepper or Shichimi, or Both.


It is delicious with this yellowtail distinctive flavour.
It will make you so addictive, please have a go!

Wasabi & Soy sauce flavourd Guacamole

I was pinning many pins at Pinterest, and I saw someone made Wasabi flavoured Guacamole using chef Morimoto recipe.
Today I have so many avocado in the fridge, so I've decided to make it

Delicious wasabi & soy sauce flavoured Guacamole recipe


Ingredients
half Lemon juice
Quarter Lime juice
1 Avocado mash
half spring onion Finely chopped
1 to half fresh chili finely chopped
half tea spoon wasabi
a little drop of Japanese Soy sauce
Salt, Black pepper, Japanese 7 spice Shichimi to taste

Mash avocado with lemon & lime juice
Add Spring onion, chili, and mix together
Sprinkle wasabi, salt, black pepper, 7 spice to season
Mix all together
And have it with Brown Rice cracker.

Add wasabi
 
Sprinkle Japanese 7 spice Shichimi


It is gluten free and Avocado has Vitamin E.
 
Serve with Brown rice crackers

Miso Ramen Recipe - Easy to cook

I love miso ramen, and I can't get hold of Japanese ramen noodle
so that  I use spaghetti for ramen noodle.

It is so delicious and easy to cook.
And Miso is good for you.

Soy has too much estrogen that it is not so good for us,
but once soy beans fermented to miso, Soy beans miso becomes super food.
I think if you eat soy products, you should eat seaweed together.

I Thank my Japanese heritage and wisdom.
My mother makes Barley miso every year in June during raining season.
So koji (rice yeast) blossoms on barley easily I am guessing, She spreads the trays barley is on in the guest rooms.
and the smell of the room was full of mold and humid and warm.
It is different how home made soy bean miso is made, I can't recall exactly how my mother makes barley miso.


Miso ramen ingredients

120g  spaghetti to boil
250ml of chicken stock or dashi
3 pieces x Spring onion finely chop
5g Leek if you have finely chop
1 or half bird eye chili
a handful of beansprouts
30 gram chicken, or pork, or fish ( I use seabass)
1 and a half table spoon of Brawn miso
1 table spoon veg oil or olive oil ( I love olive oil)
Black paper to taste
You could add asparagus and mushrooms if you like

Heat oil, and cook spring onion garlic, and leek together,
when you smell the garlic is cooked, add meat and red chili, and season with black pepper, and
stir in miso, and beansprouts, cook for a few minutes, and add dashi, then noodle, and dash of soy sauce.
